Diet – For some, I think this is the most stressful word ever invented in the English dictionary. Hundred percent, I, too, couldn’t agree more. Though I’m petite and have a small frame (gosh ok vertically challenged as well), I surely can relate to this dilemma. I never had an issue with obesity since I have fast metabolism. Of course, I can still tell that being on a diet isn’t easy, but I believe that with determination and right perspective, we can definitely achieve our ever-dreamed body. 🙂

My boyfriend’s currently doing this “Fight for your Happiness 90-Day Challenge.” And I swear to god I cannot imagine and even deal how persistent he is to achieve his goal. He was chubby when we first started dating (2007). His waist line was around 34 inches and his weight was 75kg. But dang, thank you Lord for blessing me with an amazing man. He never stopped proving other people wrong as well as improving himself amidst the body shaming, bullying, etc. With that, I was inspired to help him.

I made 3 easy diet recipes to help him keep a few pounds off. Mind you though, I am not a nutritionist and I’m definitely not into counting and computing calories, fat, etc. I just made these simple recipes since I noticed that my boo was eating the same meals over and over again. So here you go, my very own diet meals! 🙂

1. Fried Milkfish Fillets with Veggie Stir-Fry

  • Pepper
  • Milkfish fillets
  • Chopped Tomatoes
  • Chopped Cabbage
  • Chopped Onion
  • Chopped Garlic
  • Cooking oil
  • All-in-one seasoning granules/Salt


  1. Season the fish with all-in-one seasoning granules and pepper. You may also use salt.
  2. Heat vegetable oil in a frying pan or skillet over medium-high heat.
  3. Fry the milkfish. You may use any cooking oil, depending on your preference.
  4. Add the fish fillets in a single layer. Once the first side is golden, flip the fish over.
  5. Cook the second side until golden. Set aside.
  6. In a separate pan, sauté the onion and garlic in the cooking oil.
  7. Add the chopped cabbages. Make sure not to overcook.
  8. Stir fry 5 to 7 minutes or until vegetables are tender-crisp.
  9. Once done, mix the fried milkfish fillets and veggie stir-fry in a plate.
  10. Garnish with chopped tomatoes.

2. Sauteed Bitter Melon with Egg and Caramelized Onions

  • Egg
  • Sugar
  • Salt
  • Pepper
  • Chopped Bitter Melon
  • Chopped Onions
  • Chopped Garlic
  • Cooking oil
  • All-in-one seasoning granules/salt


  1. In a bowl, prepare the scrambled egg. You may use 1-2 eggs, depending on your preferred serving. Season with all-in-one cooking granules. You may also use salt.
  2. Pre-heat your frying pan or skillet.
  3. Add the oil, chopped onions then garlic.
  4. Add the chopped bitter melon.
  5. Sprinkle with cooking granules. You may use one sachet, but do not pour everything at once. Season to taste.
  6. Stir-fry until it’s tender-crisp.
  7. Add the egg.
  8. In a separate pan, put a bit of oil. Add 1 tablespoon of sugar and chopped onions.
  9. Sauté until caramelized.
  10. Once done, put veggies in a plate then garnish with caramelized onions on top.
  11. You may also serve with chopped apples. 🙂

3. Fried Chicken Breast with Carrots and Banana

  • Chicken Breast
  • Salt/All-in-one seasoning granules
  • Pepper
  • Chopped Carrots
  • Cooking oil
  • Chopped Banana


  1. Sprinkle chicken breast with seasoning granules/salt with pepper.
  2. Pre-heat your frying pan or skillet.
  3. Fry chicken. Once the first side is golden brown, flip it over.
  4. Cook the second side until golden brown as well. Set aside.
  5. Garnish with chopped carrots and banana.
